Back and More Gluten Free than Ever!

After a long break, I am back to blogging, or re-blogging, or…well whatever. Any who, I’m back to tumblr and for my first new post I am going to give a short list of fantastic gluten free products that we discussed this summer. 

Over the summer, we decided to check out Mario Batali’s Eataly, where I assumed there would be nothing for me seeing as it’s filled with lovely products that contain gluten. But on a lonely shelf by the end of the pasta aisle was a lovely little section devoted to gluten free pasta. So I picked up a box and decided to try it and well, it’s fantastic and tastes like real pasta!! So for those of you who are reading this, if anyone is, you need to go and get Schar, they have tons of delicious products! Below is the link. So check it out, I’ll be back to post soon!

Herb Roasted Chicken
2 Legs and Thighs 
1/2 tablespoon kosher salt
1 teaspoon ground white pepper
1 tablespoon olive oil
1 tablespoon unsalted butter
1/2 teaspoon minced garlic
1/2 teaspoon chopped fresh thyme leaves
1/2 lemon, juiced
Oven Roasted Potatoes
Olive oil
2 large red bliss potatoes, thinly sliced
1/2 large onion, sliced
Thyme sprigs
2 tablespoons butter
Salt and freshly ground black pepper
Pre-heat oven to 450 degrees 
Coat pan with 2 tbsp of olive oil on high heat. Season both sides of the chicken with salt and pepper. Once pan is hot place chicken skin side down. Sear until golden for 3-5 minutes. Place in oven to bake for about 20 minutes. While the chicken is baking, coat another pan with olive oil on medium heat. Slice potatoes, and 1/2 an onion (sliced) and add to pan. Stir together adding 2 tbsp of butter and thyme springs. Place in oven to coat for 20 minutes. 
While the chicken and potatoes are baking in the oven. Take 2 tbsp of butter, 1/2 tsp of garlic (minced) and thyme (finely chopped) and add together. It is best to let the butter sit out for a while so it’s easier to mix together, also when combining all three its best to use a fork. 
Once the chicken is cooked, remove from pan and plate adding the garlic/thyme butter to the skin and drizzle some lemon juice on top. Remove the potatoes from the oven and serve! Enjoy!

Shirred Eggs

  • Two Large Eggs
  • 2 T Cream (Half and Half will work)
  • Cheese (Enough to cover the top)
  • 1 tsp Oregano
  • Salt/Pepper
  • Something carb-y. I used bread, Kristin used tortillas. 

Pre-heat oven to 425. Crack the two eggs into the ramekin. Pour the milk on top. Sprinkle on oregano and salt/pepper. (I added a few red chili flakes to mine, but left them out of Kristin’s. It didn’t really add any noticeable spice, so I would leave it out in the future.) Top with cheese. You want the layer of cheese to be thick. I mean, who doesn’t like cheese, right? 

Place in the oven for about 7-10 mins. I left ours in for about 10 mins and the yolks were firmly set. If you want a runny yolk, leave it in for a little less time. 

Beef Fajitas with Onions and Peppers

  • Thin sirloin steaks
  • Corn Tortillas
  • 1/2 Large Onion
  • 1 Red Bell Pepper
  • 2 T Cumin
  • 1 T Cayenne
  • 2 T Chilli powder
  • 2 Limes
  • Vegetable oil

Cut and juice 2 limes into a large ziplock bag. Add the Cumin, Cayenne, and Chili Powder into the bag a long with enough Vegetable Oil to coat the steaks. Add the steaks to the bag and massage the spices into the steak. Put the bag in the fridge while you cook the onions and peppers.
